Watermelon “Pizza”

Time: ~10 minutes

Ingredients:

Fruit & Toppings

  • Watermelon
  • Strawberries
  • Raspberries
  • Blackberries
  • Blueberries
  • LesserEvil Watermelon Hibiscus Popcorn
  • Honey
  • Mint
  • Thyme

Whipped Topping – Cream Cheese Version

  • 1/2 cup dairy free cream cheese
  • 1/2 cup coconut yogurt or coconut cream
  • 2 tbsp honey or maple syrup

OR

Whipped Topping – Coconut Whip Version

  • 1/2 cup frozen coconut cool whip
  • 1/2 cup coconut cream
  • 2 tbsp honey or maple syrup

Directions:

  1. Prep all of your fruit by cutting a round slice of watermelon from the middle of the fruit to assemble the “pizza” on. Prep any other fruit/toppings, such as cutting strawberries into halves or fourths. Set aside.
  2. Choose which topping you’d like to make (cream cheese or coconut whip) and combine those ingredients in a food processor. Blend until completely combined and smooth.
  3. On the watermelon slice, spread the whipped topping on top in an even layer.
  4. Assemble all of the berries into the whipped topping, then finish off the “pizza” with a generous amount of LesserEvil popcorn pieces, both full and crushed, as well as a drizzle of honey and fresh herbs to garnish.
  5. Slice the “pizza” into triangles and enjoy!

Notes:

  • If using coconut cool whip, it must be frozen! If the topping is too runny, let it chill in the freezer until it is spreadable and not melted.
  • If using coconut cream, be sure to only use the hardened part from the can, none of the liquid.
  • You are welcome to use your favorite fruits, herbs, etc. for the toppings in order to make it fit your preferences and needs!
  • Assemble the “pizza” no longer than 1 hour prior to serving.
  • If you plan to serve this at a gathering, you can slice the watermelon into triangles and have all of the toppings in bowls so that everyone can build their own!
