Piña Coconut Macaroons

Ingredients:

  • 2 egg whites, room temperature
  • 1 tsp vanilla extract
  • 1⁄8 tsp salt
  • 1⁄4 cup granulated monk fruit sweetener
  • 2 tbsp water, room temperature
  • 1 cup shredded unsweetened coconut
  • 1 cup finely ground LesserEvil Piña Colada Popcorn
  • 1⁄2 cup dark chocolate, melted, for dipping

Directions:

  1. Preheat the oven to 325°F, and line a baking sheet with parchment paper.
  2. Whisk the egg white, vanilla and salt in a bowl. Thoroughly stir in the monk fruit sweetener and water. Stir in the coconut and popcorn until thoroughly and evenly coated.
  3. Using a 1-tablespoon cookie scoop, drop rounded mounds of the coconut mixture onto the prepared baking sheet. Bake for 23-25 minutes, or until the outsides are firm and the coconut is golden.
  4. Cool on the pan, the dip in melted chocolate and top with more popcorn.
