Hibiscus Bars with Popcorn Shortbread Crust

Ingredients: Crust
  • 3⁄4 cup room temp vegan butter
  • 1 1⁄4 cups gluten free flour
  • Large pinch of salt
  • 1 tsp vanilla extract
  • 1⁄2 cup powdered sugar, sifted
  • 1⁄2 cup finely ground LesserEvil Watermelon Hibiscus Popcorn
Filling
  • 1/2 cup fresh squeezed lime juice
  • 2 tbsp hibiscus tea
  • 3 large eggs
  • 1 1/2 cups sugar
  • 1/2 cup gluten free flour
Directions:
  1. Combine all the crust ingredients in a large bowl and cream together until a sticky dough forms.
  2. Spread into an 8×8 pan lined with parchment and bake at 350 for 30-35 minutes until it is just lightly browned. Set it aside to cool, but leave the oven on.
  3. Meanwhile make the filling. Stir the hibiscus into the lime juice. Whisk the eggs and sugar together until well blended. Stir in the lime juice/hibiscus and then blend in the flour.
  4. Pour the filling over the crust and return to the oven to bake for another 20-25 minutes, until the center of the filling is set and not jiggly. Let cool fully before slicing.
