Featuring: LesserEvil Watermelon Hibiscus Popcorn
Ingredients: Crust- 3⁄4 cup room temp vegan butter
- 1 1⁄4 cups gluten free flour
- Large pinch of salt
- 1 tsp vanilla extract
- 1⁄2 cup powdered sugar, sifted
- 1⁄2 cup finely ground LesserEvil Watermelon Hibiscus Popcorn
- 1/2 cup fresh squeezed lime juice
- 2 tbsp hibiscus tea
- 3 large eggs
- 1 1/2 cups sugar
- 1/2 cup gluten free flour
- Combine all the crust ingredients in a large bowl and cream together until a sticky dough forms.
- Spread into an 8×8 pan lined with parchment and bake at 350 for 30-35 minutes until it is just lightly browned. Set it aside to cool, but leave the oven on.
- Meanwhile make the filling. Stir the hibiscus into the lime juice. Whisk the eggs and sugar together until well blended. Stir in the lime juice/hibiscus and then blend in the flour.
- Pour the filling over the crust and return to the oven to bake for another 20-25 minutes, until the center of the filling is set and not jiggly. Let cool fully before slicing.
